Using one side as a tap-off for the other side is and has been standard paractice in a saddle shops for years. How you deal with leather moisture is a personal preference. If you let the first piece dry before tapping it off, you lose all the casing.....the down side is if you use the first piece as a tap-off while it is ready to tool, the the process closes up the cuts somewhat on the first piece. Most of the toolers I know, just deal with the cuts being closed up a little. It makes the first piece a little harder to bevel but it is not the end of the world!
