Olive.......a palm sander woulsdwork but might take a little more time. The grit you use would depend on the amount of damage to the surface of the board. I would think htat you would want to finish with something like a 150 - 200 grit.

I don't think you will be happy with the plywood. A piece of HDPE (commercial cutting board) would be the best thing to use. It might be more espensive than the plywood, but it will last a long time and when the surface gets too chewed up it can be sanded down. You will have to go to a plastics supplier or the net to find it.  Here is a link for more info.. www.professionalplastics.com

My workbench is an old desk with a 2'5" x 4'11" top. I've been thinking 
about placing a sheet of plywood (cut to the exact size) on it for a
